Musroom Parsley Brushetta




 Ingredients
  • Mushroom
  • French Loaf
  • Onion
  • Salt
  • Pepper
  • Parsley
  • Oil 

Method


  • In a tablespoon of oil add chopped onion saute it
  • Add mushroom and mix welland then add salt and Pepper to taste
  • Add parsley to the mixture
  • Cut the bread into slices and toast it
  • Spread the mixture on the toasted bread slices

If you want you can also add toppings like grated cheese/chlli flakes/oregano before serving

Chicken Pakoda

Chicken Pakoda - vinfoodie

 Ingredients
  • Chicken
  • Gram Flour (Besan)
  • Curd
  • Jaljeera/chat masala
  • Chicken masala
  • Salt 

Method

  • Take curd in a bowl and mix with Jaljeera or chat masala, chicken masala and salt
  • Add chicken to the mixture and marinate it for 5-10mins
  • Add gram flour and mix well so that it forms a coat over the chicken (if required add some water)
  • Take chicken pieces from the mixture and deep fry them in oil
Serve hot with Sauce

Crispy Cheese & Chicken


 Ingredients
  • Cheese cubes
  • Boneless Chicken cubes
  • Garlic
  • Salt
  • Coriander
  • Lemon Juice
  • Egg
  • Tomato Ketchup
  • Breadcrumbs
  • Oil


Method

  • Mix Chicken cubes, finely chopped garlic, Coriander, Lemon juice, Egg, Tomato Ketchup & Salt
  • Take a toothpick and string one cheese cube in between the chicken cubes
  • Roll this in breadcrumb. Incase the layer is not thick dip it again in the mixture and roll again in breadcrumb.
  • Press tightly so that the breadcrumb sticks firmly
  • Heat oil in a deep frying pan and slide the sticks inside and deep fry them until golden & crisp.


Serve hot with Ketchup.

Fish Fry


Ingrediants

  • Fish
  • Suji/Rava/Semolina
  • Breadcrumbs
  • Chilly Powder
  • Ginger Garlic Paste
  • Salt to Taste
  • Oil to Fry


Method

  • Wash the fish well and marinate it with ginger garlic paste
  • Mix Suji/Rava/Semolina, breadcrumbs, chilly powder & salt
  • Dip the marinated fish in the above mixture and apply it on all sides
  • On a pan put some oil & fry the fish

Dudhi/ Lauki/Milk gourd halwa


Ingrediants

    • 1 medium sized Dudhi/Lauki/Milk gourd 
    • Sugar
    • Khoya
    • Cardamom
    • Cashew
    • Pistachio
    • Butter/Desi Ghee
    Method
    • Remove the seeds and skin of Dudhi/Lauki/Milk gourd & grate it
    • In a Pan heat Butter/Desi Ghee on a medium flame
    • Add grated Dudhi/Lauki/Milk gourd and stir till it turns transparent
    • Add Khoya and mix well and stir for another 5-10 mins till it mixes well
    • Add sugar and stir it for another 5 mins
    • Once done add crushed cardamom and mix it well
    • Halwa is ready
    Garnish with cashew and pistachio and serve hot

    Quesadilla


    Ingrediants

    • Boneless Chicken
    • Grated cheese
    • Capsicum
    • Sliced Onion
    • Salt
    • White refined flour/all purpose flour (Maida)
    • Oil

    Method
    • Make small peices of Chicken
    • Add salt to water and cook chicken in it
    • Make large maida Rotis and cook them slightly (You can also use readymade tortillas)
    • Place one roti/tortilla on a frying pan on a medium flame
    • Spread half side of the Roti/Tortilla with grated cheese
    • Add some pieces of cooked Chicken, Onion & Capsicum
    • Sprinkle some salt over
    • Fold the other half of the Roti/Tortilla & keep flipping it until the Cheese melts & the Roti/Tortilla is cooked well.
    Cut it into half and serve hot with sauce/ketchup

    Note:
    • You can also add tomato, Mushrooms, Olives
    • Veggies can replace the Chicken with Paneer

    Crumbling Corn

    Ingrediants
    • Bread
    • Corn
    • Cheese
    • Mayonnaise
    • Ginger garlic paste
    • Salt to taste
    • Small onion
    • Oil to deep fry

    Method
    • Cut onion into small pieces
    • Mix Sweet Corn, Mayonnaise, ginger garlic paste, onion
    • Cut the edges of bread and then make the slices into half
    • Spray water on one side of the cut bread
    • Spread the mixture above on one sides which is sprayed by water
    • Put some grated cheese on the spread mixture
    • Keep the other side over the top with the sprayed side facing downward
    • Close all the open  ends (since the bread is wet it would close easily)
    • Deep fry the bread until light brown.

    Cut it into half and serve with ketchup/sauce

    Note
    • Since the mixture contains mayonise do not deep fry too for long.
    • You can also deep fry the cut edges and spread them over before serving
